Banana Chocolate Chip Breakfast Bread

Who doesn't love chocolate chips? 

I must admit I am in for just about anything combined with chocolate, and when nourishing ingredients like bananas, almond flour & eggs meet up with a little bit of chocolate in the morning, the day is off to a  good start.  I love that this recipe is a good way to use up the bananas that no one is going to eat because they have been on the counter a little too long and it this bread helps to give  plenty of energy to get through a full morning of activity.

My daughter especially loves this bread and I love that most of its sweetness comes directly from the fruit with only a little extra added from the honey which has tons of benefits on its own.  This is also a great recipe to take to a friend or neighbor or for a special treat, a piece of it would go great with an afternoon cup of tea.  

The simplicity of how quickly it can be mixed up and baked are great reasons to serve this at your house for breakfast tomorrow.  


Banana Chocolate Chip Breakfast Bread

makes one 8x8 pan

ingredients

1-1/4 cups almond flour
1/4 cup coconut flour
1/4 cup avocado oil
1/4 cup honey
1/4 cup mini chocolate chips
2 eggs
2 bananas, very ripe
1/2 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda


 

directions

preheat the oven to 350º and line an 8x8 glass dish with parchment paper.

in the bowl of a stand mixer, cream together the bananas, avocado oil & honey.

beat in eggs, just until combined. 

stir in dry ingredients & chocolate chips until well combined. then pour mixture into the baking dish lined with the parchment paper.  

wet your fingertips with cold water & smooth the batter down on top into an even layer in the dish.  

bake 25-27 minutes.

allow to cool 10 minutes before serving & store leftovers in the fridge for up to 4 days.
