Berry Vanilla Popsicles

I have had an ice cream obsession since I was a little girl.  It has something to do with the fact that every time I went to my grandparents house, my grandfather would whisk me off to look in the deep freeze to see how many types of ice cream he had bought for us to share together while I was visiting.  I can tell you I indulged in more than my share.  We would eat a bowl together each night as we watched MASH after the 10 o'clock news.  It was just the thing we did together.  He would promptly fall asleep & I would carry our bowls to the kitchen & tuck myself into the back room just across the hall from where my grandmother slept.  As a kid I thought she had no idea we were up late eating ice cream, but now I realize, that of course, she knew all along.

I'm not advocating indulging in sugary-sweet ice cream or feeding it to your children {especially late night} but it's the memories my life is made of.  My favorite flavor was always vanilla.  

Now when I choose to indulge in something sweet, I like to make sure the ingredients are whole & pure.  The base of this Berry Vanilla Pop reminds me of the vanilla ice cream I loved as a kid &  it's stuffed full of strawberries & blueberries to give it a refreshing burst of flavor for a hot day.  If this is what my grandfather had given me as a kid I would have loved it just as much because life isn't made of the food we eat, it's made of the memories we make while eating food to live.  

So go make these Berry Vanilla Popsicles, share them with someone you love & make some sweet memories.


Berry Vanilla Popsicles

ingredients

 1 {5.4ounce} can coconut cream

1/2 cup light coconut milk

1/3 cup + 1 tablespoon maple syrup

1-1/2 teaspoons vanilla extract

1/4 teaspoon salt

6 large strawberries, chopped into pieces

1/2 cup blueberries

6 ZOKU popsicle molds

directions

Prepare the popsicle molds in the stand & layer strawberries & blueberries evenly into each mold.  I like to do a little bit of strawberry, then a little bit of blueberry a couple of times in each one, but feel free to layer this however you want to!

place coconut cream, coconut milk, maple syrup, vanilla & salt in a blender & blend just until well combined ~ about 15 seconds.

carefully pour the vanilla ice cream base over the fruit, allowing it time to settle into all the crevices of the fruit in the molds.  

place base & stick in the popsicles & freeze overnight before serving.
