Double Chocolate Chip Peppermint Cookies

I love anything that is chocolate & mint combined. I can’t make these cookies very often because I can’t resist them but when I do make them, everyone loves them. I have given these cookies to a bunch of people & they all agree. {Even the people who don’t care if their cookies are grain-free}

And as much as I think of pumpkin desserts at Thanksgiving, I gravitate toward chocolate & mint for Christmas & Valentines Day. Of course you can eat these cookies year round, but they seem to fit those 2 holidays perfectly.

These cookies have the best crisp outside crunch with a soft center. They are super easy & bake up really quick. They’re perfect for the next time you need a dessert or just a cookie fix.

Oh & you’ll notice in the recipe below that I’ve listed cocoa powder or cocao powder. Do you know the difference? Cocoa powder is ground from roasted cocao beans, but Cocao powder is ground from unroasted cocoa beans. Which one you use, is totally your choice as they will both work the same in this recipe. Double Chocolate Chip Peppermint Cookies

ingredients

 dry ingredients:
2-1/2 cups almond flour
3/4 cup dark chocolate chips
1/4 cup cocao/cocoa powder
1/4 cup coconut sugar
1/2 teaspoon salt
1/2 teaspoon baking soda

wet ingredients:
1/2 cup maple syrup
1/2 cup avocado oil
1 tablespoon vanilla extract
4 drops peppermint essential oil {therapeutic grade}

directions

preheat oven to 350

combine dry ingredients in a medium bowl. then combine the wet ingredients in a separate large measuring cup.

stir the wet ingredients into the dry & mix well.

using a medium size cookie scoop, scoop out balls of dough onto parchment paper & then slightly flatten with palm of hand {wet your hand to keep the dough ffrom sticking to your skin}

bake 10-12 minutes, until edges & tops look done. be sure to watch these cookies closely at the end of the baking time. almond flour goes from not done to burned very quickly.
