Orange Coconut Balls

When I was a little girl, my mom & her friend would bake for hours right before Christmas.  It was a highlight of my year to play over at her friends house while they baked & then occasionally I would sneak into the kitchen to grab a few treats.  

One of the items they used to make were these no-bake orange coconut balls, that were super yummy.  Unfortunately, those little balls were full of ingredients that I have since discovered aren't so healthy, so when I wanted to replicate the flavor of this dessert, I went on the hunt for some ingredients I could substitute.  

The result was this amazing little orange coconut ball, made with just 6 ingredients.  Each ingredient is healhty & whole & the ending flavor is sweet & scrumptious.

Orange Coconut Balls

ingredients

6 ounces, pitted medjool dates

1/4 cup coconut butter, softened

1/4 cup orange juice, freshly squeezed

1/2 cup cashews, raw

1/2 cup shredded coconut, divided

zest of 1 orange

directions

place raw cashews in a food processor for 15-20 seconds

add in dates, orange juice, coconut butter, orange zest & 1/4 cup of shredded coconut

process another 30 seconds or so {until well combined & a dough like consistency}

scoop out with a medium cookie scoop & roll into balls.  roll balls in remaining 1/4 cup of shredded coconut.

place in freezer 20 minutes, then serve or store in refrigerator until ready to eat.
