Pina Colada Popsicles

With just 4 little ingredients, these Pina Colada Popsicles are not only easy, they are fun to make, fun to eat & a delicious little treat for summer days.

Something about pineapple makes me think beach & poolside snack. I think the smell reminds me of sunscreen. Maybe it’s weird, but no matter, these popsicles are a great way to cool down when you’re hot, whether you’re by the ocean or not.

These don’t have any alcohol in them. I did this to keep them kid-friendly, but also because I don’t like to have alcohol on a daily occurrence, but I want to be able to eat these popsicles all the time! If you want to make these an “adult” dessert, you can replace the vanilla extract with white rum.

Pina Colada Popsicles

ingredients

1 can full fat coconut milk
2 cups pineapple chunks
1/4 cup maple syrup
2 tablespoons vanilla extract

required kitchen tools:
blender & popsicle molds

directions

place all ingredients in a blender.

turn the blender on high until the pineapple is completely smooth (about 45-60 seconds).

pour into 9 popsicle molds & freeze until set (about 6 hours).
