Trail Mix Clusters

I love snack items. Trail mix has always been one of my favorites. I love the combination of savory nuts, sweet raisins & chocolate, and the slight saltiness that lingers & is oh-so-satisfying.

So when I got the idea to make the trail mix into a cluster, I knew I had to do it! And these things are a home run! They’re absolutely delectable & just a couple of them completely satisfy the desire for a munch-able snack.

Though the recipe calls for raisins, I think they would be super yummy subbing out dried cranberries or blueberrries too. I know you’ll come to love this fast little snack as much as we do.

 
 

Trail Mix Clusters

INGREDIENTS

1 ½ cups dark chocolate chips
1 cup plain, unsalted peanuts
1 cup raisins
½ cup + 1-2 tablespoons shredded coconut
½ cup pepitas, raw unsalted
Finishing salt

DIRECTIONS

Place the peanuts, raisins, pepitas & ½ cup of the shredded coconut in a medium-sized mixing bowl.

Melt the chocolate chips in a double-boiler or in the microwave*.

Pour the melted chocolate over the dry mixture & stir until fully coated.

Line 2 cookie sheets with parchment paper. Drop spoonfuls (a tea spoon—like the kind you stir tea with—works great for this) of the mixture onto parchment paper. Lightly sprinkle the finishing salt and the desired amount of shredded coconut onto the tops of the clusters.

Refrigerate for 30 minutes to allow the chocolate to harden. Store in the refrigerator for up to one week.

*If you microwave the chocolate, be sure to do so in a large glass measuring cup with a handle and in 30-second increments so you don’t burn the chocolate.
