Easy Fudge

Fudge is a perfect, year-round dessert. It’s no bake appeal & classic flavor make it a favorite for kids & adults alike. This fudge, with only 4 simple ingredients, doesn’t require an oven or even a candy thermometer like traditional fudge.

The other thing I love about this fudge is that you can make it with a creamy chocolate, dark chocolate or a combination of both. I have used dairy free milk chocolate chips by themselves & also have combined them with dark chocolate chips. It’s really up to you how rich or sweet you make this recipe depending on which type of chocolate you choose.

This fudge mixes up super quick in a double boiler, which you can make by simply putting a large stainless or glass bowl on top of a pot of boiling water or use a double boiler that is made specifically for candy melting. If you need a tutorial on how to do this, check out this video.

Though you’ll have to wait a few hours to eat this fudge, it mixes up in about 10 minutes & makes so much it will last you for really long time!

Easy Fudge

INGREDIENTS

3 cups chocolate chips (see note above)
1 cup full fat coconut milk
1/2 teaspoon vanilla powder
3/4 cup coarsely chopped walnuts

DIRECTIONS

in the bowl of a double boiler, use a whisk to combine the chocolate chips & the coconut milk.

once the chocolate has melted & combined with the coconut milk, remove the bowl from the heat & whisk in the vanilla powder, then fold in the chopped walnuts with a flat spatula.

line an 8x8 or 9x9 square dish with parchment paper & pour the mixture into it, spreading it all the way to the edges.

refrigerate 6 hours or overnight. turn the fudge out onto a large cutting board & cut into pieces, you will easily get 30-36 pieces from one batch. this is a great dessert to make up in advance - store in the refrigerator for up to one week.
