Fudgy No Bake Brownies

Years ago I used to have a recipe for no bake cookies. Those cookies were my absolute favorites. Unfortunately, they are full of things that I no longer eat like grains & refined sugar. I didn’t set out to make something to replace them when I created this recipe for Fudgy No Bake Brownies. All I was trying to do was make something to appease my insatiable sweet tooth.

These Fudgy No Bake Brownies not only hit the spot, but they taste just like those other no bake cookies I used to make, except with these I don’t have to worry about feeling lethargic or overstuffed when I eat them because they are made from whole food ingredients that don’t spike my insulin levels. And I’m always up for a sweet treat that doesn’t have added sugar.

It’s so much easier for our bodies to process fruit sugar than it is added or refined sugar. Since the sweetness in this recipe comes from dates, it’s even better. Dates are low glycemic & high fiber. Fiber is crucial to help your body properly digest fruits sugars.

Fudgy No Bake Brownies

INGREDIENTS

15 large medjool dates, pitted
1 cup walnuts
1/2 cup pecans, broken into pieces
1/2 cup sunflower butter, no sugar added
1/3 cup cocoa powder
2 tablespoons coconut butter
1 teaspoon vanilla
1/2 teaspoon salt

DIRECTIONS

place the dates & walnuts in a food processor. process until very fine & crumbly.

add sunflower butter, cocoa powder, coconut butter, vanilla & salt to the bowl of the food processor & process again until smooth.

place the “dough” in an 8x8 dish & press firmly until spread out in the pan & flat. {i place parchment paper on top of it & use the bottom of a glass to press it down}

sprinkle the pecan pieces over the top of the brownie. cut into 16 pieces. refrigerate for 2 hours.

serve cold.
